Homemade Turkey Soup

I've taken a big sigh of relief as the winter holidays have come to an end and spring is right around the corner. It's time to use the holiday frozen goods. This soup is a smell of home, comfort, and is nourishing from the inside out.







Homemade Turkey Soup
Ingredients:
4qt         water
1            turkey carcass 
3            russet potatoes peeled and diced
3            stalks of celery diced
1            large onion diced
2c           shredded cabbage
4            large carrots diced
1t           basil leaves
2t           salt
1/2t       pepper
1/2t       paprika
1/4t       red pepper flakes
2T          worcestershire sauce
1t           dried parsley
1            bay leaf
3/4c       white rice
2cans      diced tomatoes (14oz)
Directions:
Simmer the turkey carcass and water for 1 hour (during this time prepare chopped vegetables). Take out the carcass, let cool and pick off turkey pieces for the soup. Strain the turkey stock and return liquid back to the pot. Add chopped vegetables, seasonings, rice and cook for another hour. Five minutes before serving add turkey pieces to the soup. Serve warm and with a side of corn chips.
