Easy Thai Chicken

When life just doesn't give you enough time, still enjoy a delicious home cooked meal. This is the perfect recipe for a busy day! Easy Thai Chicken has a satisfying creamy sauce that is great when served with rice and a sauteed vegetable.
 Ingredients:
1 c             coconut milk
3/4 c          hot salsa
1 T             brown sugar
1/2 c          red pepper, finely chopped
2 T             soy sauce
1/3 c          chunky peanut butter
2 T             lime juice
2 T             fresh ginger, grated
2 lbs           chicken thighs

Directions:
Mix ingredients and pour over the chicken in the crock pot.Cook on low for 6-8 hrs. Serve with  rice and top with chopped peanuts and cilantro.
