Creamy Basil Chicken


Quick & satisfiying the family or guests will love it! A delicious creamy basil chicken recipe that's great over rice or gluten free pasta. 



Creamy Basil Chicken (serves 4)
2 T           olive oil
1 c           red pepper diced
½ c           sweet onion diced
5 lg          baby portobello mushrooms
2              boneless, skinless chicken breasts cubed
1 T           butter
1 c           half and half
1t             minced garlic
2T            fresh basil chopped (2t dried basil)  
1/2t         pepper
tt             salt
½ c           grated parmigiano reggiano
Directions:
Heat olive oil in a skillet and sauté onions, peppers, garlic and mushrooms. Take ingredients out of skillet and melt butter. Brown chicken until no longer pink and juices are running clear. Add half and half, cheese, basil, pepper, and salt to skillet. Bring to a boil and lightly simmer on a low heat for 4-5 min. Serve over rice or gluten free pasta.
