Try this quick and easy stir fry for your next busy night. This simple combination has a satisfying flavor and is a great way to use up the leftover raw vegetables in the fridge.

2 ½ c Cooked
Brown Rice
2 Zucchini,
sliced ½”
1 Red
Bell Pepper, chopped 1” pieces
1 Sweet
Yellow Onion, chopped 1” pieces
2 Whole
carrots, sliced ½”
1 can Pineapple Chunks, 8oz.
1 pkg Apple
Chicken Sausage, 12oz.
1T Canola
Oil
1T Cornstarch
2T Reduced-sodium
Soy Sauce
1/3c Cold
Water
1T Brown
Sugar
Directions:
Drain pineapple; reserve pineapple chunks and juice. In a
large skillet, sauté vegetables in oil until crisp tender. Add sausage and
pineapple chunks; cook and stir until heated through. In a small bowl, combine
the cornstarch, water, soy sauce, brown sugar and reserved pineapple juice. Stir
into sausage mixture. Bring to a boil. Cook and stir for 1 minute or until
sauce is thickened. Serve over cooked brown rice.
