Most premade meatballs and common recipes have breadcrumbs or other gluten containing ingredients. This is an easy recipe to replace that familiar home cooked meal that can still remain a favorite after going gluten free.
Ingredients:
1lb ground beef
1/3c instant
potato flakes
1/4c milk or
water
1T GF soy
sauce (I use La Choy)
1T parsley,
finely chopped
1 large
egg
1/4c carrots,
finely grated
3/4t salt
1/4t pepper
1/8t garlic
powder
Directions:
Mix seasonings, add ingredients, and then mix with well into
ground beef. Form beef mixture into 1 1/2” balls. Place into an oven safe
baking dish and bake for 25min or until beef reaches 170 degrees. Serve with
your favorite GF marinara sauce and GF pasta or steamed julienned zucchini.
Note: Some of my favorite tools are the titan peeler and julienne tool to work with zucchini as a natural GF food and low carb spaghetti substitute.
